Chicken Pizza Recipes

This recipe uses a chicken fillet as the base of the pizza which is both different and could be considered a more healthier option.

Ingredients

  • 1 chicken breast
  • ½ red onion
  • ½ red pepper
  • 1 garlic clove
  • 1 tbsp stock
  • 40g low fat cheese
  • 2 tomatoes
  • 1 cherry tomato
  • 1 tbsp tinned tomatoes
  • 1 tbsp tomato puree
  • 1 tsp dried oregano

Recipe

  1. Dice the onion, chop the pepper and crush the garlic
  2. Put these into a saucepan with the stock and leave to simmer for 2 minutes
  3. Skin the 2 tomatoes and chop into small chunks
  4. Add the 2 tomatoes, tinned tomatoes, tomato puree and oregano
  5. Preheat the oven to 200ºC
  6. Cut the chicken horizontally in half (being careful not to cut it into two)
  7. Fry the chicken briefly to give it some colour
  8. Place the chicken in the oven for 20 - 22 minutes
  9. Grate the cheese
  10. When the chicken is cooked remove it from the oven, pour the tomato sauce over it and sprinkle the grated cheese on top
  11. Cut the cherry tomato in half and place on the top
  12. Put the pizza back into the oven for an additional 5 minutes
