Ingredients
- 2 cod or haddock fillets
- 115g tinned tomatoes
- 75g mozzarella cheese
- 40g sun dried tomatoes
- 25g anchovies
- 7 black olives
- 6 basil leaves
Tomato Pizza Sauce Recipe
- Put the sun dried tomatoes in a food processor with 1 tablespoon of oil and blitz
- Pour this paste into a mixing bowl
- Tear the basil leaves into small pieces and add to the bowl
- Put the tinned tomatoes into a saucepan and simmer until they have thickened (approximately 10 minutes)
- Add the tinned tomatoes to the mixing bowl and season with salt and pepper
Fish Pizza Base
- Preheat the grill to its highest settings
- Dry the fillets using kitchen towel
- Spread the tomato sauce on top of the fillets
- Thinly slice the mozzarella and layer onto the fillets
- Wash the anchovies and cut in half lengthways and arrange in a criss - cross pattern on the fillets
- Pitt and halve the olives and press on top
- Grill for 12 - 15 minutes until the fish is cooked and the cheese has browned
