Mussel with Roasted Garlic Pizza Topping

Ingredients

  • 24 - 30 mussels
  • 3 garlic bulbs
  • 2 tbsp chopped oregano

Recipe

  1. Make dough
  2. Preheat oven to 190ºC (375ºF)
  3. Place the 3 garlic bulbs in a baking tin and drizzle with olive oil and cook in the oven for 1 hour
  4. Leave to cool
  5. Slice in half cross ways between the stem and the base of the bulbs
  6. Squeeze roasted garlic into a bowl, along with the oil from the baking tin and mash with a fork until it is smooth
  7. Spread this over the pizza base
  8. Place the mussels in a large, heavy based pan with a small amount of liquid and put onto a high heat until shells begin to open
  9. Remove mussels from their shells and arrange over the pizza base
