Sweet and Sour Chicken Pizza Topping

Select the pizza base which you want to use… Pizza Dough Recipes, for this pizza topping, we recommend a Traditional Thin Crust Pizza Base

Ingredients

  • 2 chicken breasts
  • 75g carrots
  • 60g sweetcorn
  • 60g green beans
  • 1 spring onion
  • 4tbsp chicken stock
  • 2 tbsp tomato ketchup
  • 2 tbsp rice wine vinegar
  • 2 tbsp caster sugar
  • 1 tbsp soy sauce

Recipe

  1. Make the pizza dough
  2. Mix the chicken stock, tomato ketchup, rice wine vinegar, caster sugar and soy sauce in a bowl
  3. Cut the chicken into thin strips and fry until it is cooked
  4. Cut the carrots into small sticks, slice the green beans and spring onion
  5. Stir fry the carrots, sweetcorn and green beans for 4 minutes
  6. Add the sauce and boil for one minute
  7. Add the chicken and spring onion and cook for an additional 2 minutes
  8. Evenly spread the topping over the pizza base

Mini Chicken Pizza

Ingredients

  • 1 English Muffin
  • 50g cooked chicken
  • 40g mozzarella cheese
  • 20g red pepper
  • 10g tomato paste

Recipe

  1. Grill the muffin until browned
  2. Spread tomato paste evenly over the muffin
  3. Cut the chicken and pepper into thin strips
  4. Arrange over muffin
  5. Thinly slice the cheese and layer on muffin
  6. Grill for an additional 2 - 3 minutes until the cheese has melted

Tandoori Chicken Pizza Topping

Ingredients

  • 1 chicken breast
  • 100g mozzarella cheese
  • ½ small onion
  • 1 tbsp tandoori paste
  • 1 tbsp plain yoghurt
  • 1 tomato

Recipe

  1. Make the pizza dough
  2. Mix the tandoori paste and yoghurt in a bowl and add the chicken breast coat it well
  3. In a frying pan cook the chicken for 2 minutes on each side or until browned
  4. Remove the chicken from the pan and leave to cool.
  5. Cut the chicken into thin slices
  6. Slice the onion and mozzarella
  7. Arrange the chicken, onion and mozzarella evenly over the pizza base

Chicken Base Pizza Topping

This recipe uses a chicken fillet as the base of the pizza which is both different and could be considered a more healthier option.

Ingredients

  • 1 chicken breast
  • ½ red onion
  • ½ red pepper
  • 1 garlic clove
  • 1 tbsp stock
  • 40g low fat cheese
  • 2 tomatoes
  • 1 cherry tomato
  • 1 tbsp tinned tomatoes
  • 1 tbsp tomato puree
  • 1 tsp dried oregano

Recipe

  1. Dice the onion, chop the pepper and crush the garlic
  2. Put these into a saucepan with the stock and leave to simmer for 2 minutes
  3. Skin the 2 tomatoes and chop into small chunks
  4. Add the 2 tomatoes, tinned tomatoes, tomato puree and oregano
  5. Preheat the oven to 200ºC
  6. Cut the chicken horizontally in half (being careful not to cut it into two)
  7. Fry the chicken briefly to give it some colour
  8. Place the chicken in the oven for 20 - 22 minutes
  9. Grate the cheese
  10. When the chicken is cooked remove it from the oven, pour the tomato sauce over it and sprinkle the grated cheese on top
  11. Cut the cherry tomato in half and place on the top
  12. Put the pizza back into the oven for an additional 5 minutes

  3. Mix together the paprika, garlic, cayenne in a bowl
  4. Dice the onion and add to bowl along with the chicken

  • 100g red chili’s
  • 2 cloves of garlic
  • 2 pinches of ginger
  • 150ml cider vinegar
  • 150g sugar
  • 1 tsp salt

Recipe (Sweet Chili Sauce)

  1. Seed the chili’s and put in a food processor with the garlic and ginger and blitz
  2. Put into a saucepan and add the vinegar and salt and sugar
  3. Boil and stir until the sauce has thickened

Ingredients

  • 1 chicken breast
  • 1 red onion

  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil

Recipe

  2. Cut the chicken into thin strips
  3. Place the chicken in a bowl and cover with 1 tablespoon of balsamic vinegar and leave to the side for 10 minutes
  4. Heat the oil in a frying pan and add the chicken for 5 minutes until cooked through
  5. Add the remaining vinegar
  6. Remove the chicken from the frying pan and arrange over the pizza
  7. Slice the red onion and add that to the pizza too
  8. Grate the mozzarella and sprinkle that on top
